While I’m here in Canmore, I’m staying with two really great friends, lets call them “Chef It better be good (IBBG)” and “Chef It’s always good (IAG)” This is Chef IBBG’s egg tart recipe.
– Three Eggs
– Vanilla extract – to taste (5-10ml)
– 55 grams of Sugar
– 300ml of 18% cream
– box of pre-made mini shells (we used a generic Safeway brand)
This recipe makes about 13 egg tarts. We made our tarts in the BBQ but feel free to use an oven.
Step 1: Preheat oven to 400
Step 2: Whip the eggs, add the sugar, cream, & vanilla. Stir till the sugar dissolves. Fill the cups.
Step 3: Place the tarts in the oven/bbq, then lower the heat to 325 after 10 minutes. This is to make sure the shells get fully cooked. Keep in the oven for another 10-15 minutes for the custard to fully cook.
We topped up the shells with more filling once we transferred them to the bbq.
If you make yours in the oven, you’ll get more of a brown colouring on the tops but we made ours on the barbie so only a slight crust formed on the edges of ours. Chef, finished ours with a few berries on top.
These are quick and super easy to make so make sure you give it a try! Feel free to add cinnamon or nutmeg to change it up a bit!
